To answer your question(s), I would bet for the last one. Assuming she eats it, she's probably tired from work, plus this being a different side of you - she doesn't want to acknowledge or give you credit for the change.
Ignore it...knowing that she eats your cooking s/b enough to let you know she likes it. Yes, it is rude and lacks common courtesy, but she's not herself, remember?
