The eggplant seems to me to be an edible sponge for oils, salt, and seasoning, with little flavor of its own. The only redeeming value of an eggplant is that the color "eggplant" is a nice deep purple. You're welcome to try all these recipes out on me, however. Maybe I'll save some room for dessert.
