When I'm lazy I just make some pasta and heat up some sauce out of the jar. If I'm feeling fancy, I'll thrown in some frozen shredded pizza cheese and mix it around until it melts wink

If I'm feeling really fancy and I've planned ahead, I'll roast some veggies - yellow squash, zucchini, tomatoes, and sometimes carrots

Heat oven to 400F.

Thinly slice veggies - no more than 1/4 inch thick.
Place foil on baking sheet with sides.
Lay veggies on pan. Drizzle with oven-safe oil. Sprinkle on salt, pepper, oregano and basil.

Bake until desired consistency (usually 30-40 minutes). Check after 20 minutes to flip veggies and to make sure one spot isn't getting cooked too quickly compared to the rest.
