If you don't have a crock pot (slow cooker) I highly advise getting one. In the morning or night before you pop in meat and veg a bit of water or a tin of tomatoes and whatever spices you like and turn on before you head off to work. There's nothing better than coming home knowing dinner is already DONE. I usually make a side of rice.

Not splitting the cooking anymore was tough for me. So when I cook I still make big portions (H was a big eater) and then freeze what's left. The next week I can defrost spaghetti sauce, chilli, etc and it's like I didn't have to cook!

Here is quick and easy recipe that kids will like. Also fairly cheap to make.
1 pound or more of cooked ground beef or ground turkey
2 15 oz cans of kidney beans-or use beans of your choice. I use one can pintos and one can black beans
1 can corn
1 can rotel tomatoes
1 can diced tomatoes
1 pkg ranch dressing
1 pkg taco seasoning
1 to 1 1/2 cups water {depending on how thin or thick you want it}

Mix all together and simmer for 15-20 minutes. I top with sour cream, mexican blend cheese. Can also serve over fritos or tortilla chips.

Serve with cornbread-another quick recipe

2 boxes of jiffy cornbread right out of box
1 can cream corn
2 eggs
small can of chopped green chiles,less if want milder taste
Bake approx 30 min at 400-425

You can also add a can of cram corn,

Bow tie pasta tastes yummy with basil pesto...Just cook the pasta in olive oil, add the pesto, chopped toms and add some parm! Easy peazy!

yes, interested!

Here's an easy one we make all the time when there's not much time. Beans & rice. Cook rice (rice cooker is an essential). Make Campbell's bean soup. Put some bean soup on top of some rice and add Tabasco.

I would really like a good brisket recipe.

I'll post the soup recipe shortly.
As for the brisket I made one last and it was yummy.

Take the brisket slice in in half width way. So it's very thin.
Then Get black olives, spinach and feta cheese. Chop up the olives and spinach very fine.

Then add all three ingredients to the brisket and roll the brisket up.

cook it up and slice it like pin wheels.

here a simple party app thats a big hit too

a can of corn, a can of black beans, and a can of diced tomatoes. 1 packet of taco seasoning.

mix altogether and serve with tortilla chips.

That sounds good^^^^.

Ingredients
1 pound black beans, picked over, rinsed and drained
2 tablespoons extra-virgin olive oil
1 medium onion, diced
1 carrot, diced
2 cloves
1 head garlic, halved crosswise
2 bay leaves
2 teaspoons dried oregano
2 smoked ham hocks, about 1 1/2 pounds (substitute ham or bacon)If u use bacon make sure you cook it 1st.
9 cups water
2 teaspoons kosher salt
1/4 to 1/3 cup dry sherry or dark rum
Freshly ground pepper
1/2 to 1 teaspoon balsamic vinegar

Optional serving garnishes: Sour cream or creme fraiche, minced scallion or chives, crumbled cheese such as feta, queso fresco, or grated cheddar, diced red bell pepper, diced avocado, or minced jalapeno
Directions
Put the beans in a large saucepan and cover with cold water by 2-inches. Bring to a boil and cook for 5 minutes. Remove from the heat, cover, and set aside for 1 hour. Drain, and reserve the beans. Or let it soak over night in water. I tlike that better


In a large soup pot heat the oil over medium to medium-high heat. Add the onions and carrots, and cook until lightly brown, about 10 minutes. Stick the cloves in the halves of the garlic. Add to the pot with the bay leaves, oregano, the beans and hocks. Add the water and bring to a full rolling boil. Season with 2 teaspoons salt. Adjust the heat to maintain a simmer, cook until beans and meat are tender, about 1 1/2 hours.


Pull the pot off the heat and cool slightly. Remove the hocks from the soup, set aside to cool. Remove the meat from the hocks, discarding the bones, fat and skin. Cut the meat into small cubes and reserve. Puree the soup, with an immersion blender or in batches in a blender until smooth. Additional water can be added to desired consistency. Add the sherry and vinegar and combine well. Return the soup to medium heat and simmer with the reserved meat. Season with additional salt and pepper, to taste. To serve, divide the soup among warmed bowls, and top with one or more of the garnishes, if desired.


You don't have to puree all of the beans. You can do a 1/4 puree to thinkened it.

VERY Important> DO NOT ADD THE SALT UNTIL THE BEANS ARE COOKED. It will hardened the beans and not taste good.
