I have noticed when that when we haven't text in a couple days, she initiates the contact. Always about our dogs, usually not a hello to see how I am doing.

Answering every single text or answering right away isn't the way to go about it. Remember what you have noticed so far. Let her do some pursuing, besides you're busy living life right?
When you do respond, be upbeat and positive, try answering about the dogs and leave it at that. See if she asks you anything else.
