Oh they're watching all the time. Even when the don't seem to be interested.
Cats are very curious.
Mine (not my real cat - she's a dog) watched me this morning. We had a little CB session and I said what I had to and then played with my phone and laptop.
I eventually left the house but after returning from a shower my phone was displaced and the laptop was shutting down as I walked by it with lid closed.
