If you want to discourage company, bring something with you to do. I like my iPod Touch because it looks like I'm texting on an iPhone, but I'm really playing a game or doing a crossword. Loose papers, no matter what the content (emails, articles, puzzles...), look like you're working.
Ask for the seating you want. If I go someplace where the bar is full of couples, I'll sit there and strike up a convo with those nearby. If it's full of men alone, I look for a table away from the bar, and have something to do or read.
I admit that restaurants/bars alone are not my favorite thing, but I've had to learn to deal because I travel so much by myself. It does get easier the more you do it!
