Here's a tasty raccoon roast with a raccoon tail dessert, just in case your guest aren't sure of what they're eating.

An interesting factoid... beavers can be substituted for raccoon in some recipes.

I get the feeling that raccoon roast with salt pork and beef stock is not good for gout. The good news is that the west coast does not have any raccoons with rabies. You might think twice about messing with a coon in the NE.

My son has a coon skin hat. When he wears it, other kids are envious.
