After doing many Passover dinners, I will share the only thing that gets me through all the cooking (cuz there's also all the cleaning). Make the whole soup in advance, matzah balls and all. If you get that out of the way, then it's just like cooking a regular dinner for guests. And for dessert, something that is totally not cake, rather than flourless cake works well, like chocolate mousse, or fruit and ice cream or sorbet.
