I would say do not respond. He was trying to hurt you, and I think you should just respond upbeat the next time he texts you and it is positive. Asking about his week, sets you up to hear him complain about how he is upset about the anniversary of you leaving. Asking about Sunday, sets you up to get disappointed. Wait and be patient. Wait for him to text you something that you can respond to. You need to wait for him to be open, and right now he is not. Let him stew for a while in his sadness. Take some comfort in knowing he is upset about you being gone...he misses you, even though he is blaming you for his misery, he still misses you and that is good.
