LOL, Hoosiermama's got the pork chop cravings this morning, too!

It's super-simple. I rinse the chops first in cold water, and pat them dry with paper towel. I then put some kosher salt and fresh-cracked black pepper on both sides. I turn my gas grill up as hot as it will go, lid closed, so when I put the chops on I can well-sear both sides. I then remove them, turn the grill down to low and let it cool a bit before returning the meat to the grill.

During the slow-cooking, I baste the chops frequently with apple juice. This keeps the meat moist, yet it doesn't char the way barbeque sauce does. It also adds a sweetness to the meat. During the last 5 minutes or so of grilling, I baste them with bbq sauce (store-bought "Sweet Baby Rays" for me).

That's it. Strategically turning them 90 degrees when searing to get those little diamond-shaped black lines on 'em is strictly optional.
