Ah yes my "fantasy day"... what you're suggesting is sort of what I had in mind, get out and go for a walk in the park and then hit the coffee shop afterwards. The outdoor temp may be a little low for that though tomorrow so maybe a museum instead of something outdoors. I've been talking about getting a book on sensual massage, so I thought we'd try that in the afternoon. I love touching her skin and it is something for her that I would enjoy too.
If this is to be totally about her we'd be looking at knitting stuff, petting a bunch of puppies, drinking coffee, checking out soaping supplies and then get a couple of margaritas in the afternoon... on my birthday? LOL

May I make just one suggestion though...
I like that you are trying to make the day about her a lot, you seem to be doing this to sort of "make up" for a few things you feel you have let her down on.
But don't forget the POINT of NOT being a Nice Guy....and truly ask for something you REALLY want....believe it or not, asserting yourself this way may actually turn her on, even if she intially resists!
So here's my suggestion....
You love shoes, high heels, right?
Does she still own any?
If she does, then part of your fantasy day is to ask her to wear them just for you. Whether that means just strutting around in them with a skirt alone together in the bedroom, or wearing them out in public with you to dinner or whatever....but MAKE THIS be known to her and make it seem like a requirement, not a request!
She will resist and maybe argue but she WILL feel sexy wearing them for you!
If she does not own any good heels anymore, then part of your fantasy day should be to TAKE HER to a sexy shoe store, even a porn/stripper store if you like, and find a pair that YOU like on her and buy them for YOU!! That should be your bday gift from her, is hot sexy shoes for her to wear for you on your day.
The rest of the day can be all about her if you want! But make sure you assert your TRUE desire this way to her and require it from her!
P.S....just requiring her to wear the shoes does NOT mean you are requiring her to have sex with you! The point is her WEARING them for YOU because YOU love it! Not the sex....
NO, she does not have any high heels at all now. I hint about this all of the time too. When is Birkenstock going to come out with a stiletto pump? lol I've actually said that before.
I don't know about a stripper store (now that would be a fantasy come true and a stretch) but we could go walking at the mall and find something there. If I am ever to hope to see her wearing them in public they'd have to be a respectable 4". There is a Victoria's Secret as well as tons of other shoe stores.
Hmmm "Honey part of my fantasy is to buy something for you to wear that is especially for me. Let's see what we can find in here."
