My night was good. H was happy to come home to a special dinner and loved the dessert. He was very tired, but no alien sighting at all. I got a big long hug and several kisses, yipee!
Ok, the Beef Burgandy is very easy: Stir together 3 lbs lean stew beef 3 cans Cream of Mushroom Soup 1 envelope Lipton Onion Soup mix 3/4 C. Red wine (Merlot or Cab)
Place in a heavy, lidded, dutch oven type pot. 325 degrees for 3 hrs. Let rest a bit before serving, it will be very hot. Serve over rice, mashed potatoes or noodles.
It is my signature dish, I fix it in winter when I want something special but easy. Of course I have to finish the rest of the wine from the bottle that had to be opened! It really warms the house and the smell is wonderful. H knew immediately when he walked in last night and his smile was a mile wide. But he's a meat and potatoes kind of guy.
You can also play around with it a bit if you want. Last night I pre cooked and added some fresh mushrooms before I put it in the over. (If you don't pre cook them your gravey will be too soupy/thin from the moisture in the mushrooms. Learned that the hard way. We like mushrooms, but it is also wonderful without the extras. Oldest S does not like them, but loves the dish with just the mushroom soup.
