Have people over tonight for a kind of Oktoberfest thingy. The guinness bittersweet chocolate cupcakes turned out fantastic and are a huge hit. I'll post the recipe later!

INGREDIENTS 1 (18.25-oz.) box "pudding in the mix" dark chocolate cake mix 1 (12-oz.) bottle Guinness Extra Stout or 1 (11.2-oz.) bottle Guinness Draught 1/2 cup vegetable oil 3 eggs 1 (4-oz.) bar bittersweet chocolate, finely chopped (I cheated and used Ghiradelli's bittersweet cocoa powder ) Cream Cheese Frosting (recipe follows)
DIRECTIONS Prep time: 15 minutes, Cook time: about 20 minutes
Preheat oven to 350°F and line 24 muffin cups with paper liners. Combine cake mix, Guinness, oil and eggs in the large bowl of an electric mixer. Beat on low speed for 1 minute. Scrape bowl and beat for an additional 2 minutes on medium. Stir in chocolate and pour batter into prepared muffin cups. Bake for 18 to 22 minutes or until toothpick inserted in center comes out clean. Let cool completely before frosting. Keep refrigerated.
Makes 24 cupcakes.
Cream Cheese Frosting: Beat 1 (8-oz.) package room temperature cream cheese, 2/3 cup powdered sugar and 1 tbsp. heavy whipping cream in a medium bowl with an electric mixer until smooth.
Nutrition info: (66 g): 210 calories, 3 g protein, 12 g total fat (4.5 g sat., 0 g trans), 24 g carbohydrate, 1 g fiber, 16 g sugar, 40 mg cholesterol, 200 mg sodium, 5 points
Like I said, total good stuff.
The party was pretty fun. Just 7 people including me and my roommate. Some good food, beer, and good company. It was quite nice.
I don't know what's up with the guys! LOL I guess it's just cuz I'm comfortable hanging out with guys since I work with so many of them and have so many guy friends?
H has been pretty quiet. I probably will see him tomorrow actually as I need to pick up a duffel bag from him.

Your cupcakes are a close variation to a cake I've made before. Yummy stuff.
Hmmmm interesting about "R." I don't know him all that well, have only met him a couple times when he joined "S" for a happy hour or something. I'd definitely give that one quite a bit of thought... he's tried to date just about every one of "S's" friends and it always seems to turn out pretty badly. Not sayin' that would always be the case and for sure he could be a fun guy, just sayin' I'd think hard before jumping into anything more serious. (guess that's true of ANY guy though... )
