You know what? There is a special product you can get called Whole Wheat PASTRY flour. They sell it at whole foods. You can substitute it in for normal flour and it comes out pretty much the same. The flavor is slightly different but it doesn't screw up the texture. It's silky and fluffy, like a real pastry flour, not like a gritty whole wheat flour. Sugar, hm. You could try substituting Sage Honey or Tupelo Honey, which have the lowest glycemic impact of all honeys. We would have to check and make some adjustments in the recipe because the liquid proportions would change. Or maybe investigate the glycemic impact of some kind of natural sugar substitute like Stevia??? (But don't use fake sugar, it totally f%$#s you up!!! did you see that new study that just came out that found out that fake sugar causes obesity in rats?????) Also, the cherry muffin recipe only has 1/2 a cup of sugar to start with.
I remember a while back I promised you a bunch of healthy recipes with mushrooms, sweet potatoes etc. let me know if you are still interested and what would be the best way to get them to you! I am leaving my parents' house tomorrow and will be at a music festival where I don't have access to my cookbooks or my Mom's. But when I get back from that I could get them all to you!!!!
