Wow - what a great trip. Sun shower is a great thing. I also highly recommend a sarong - it's a towel, it's a sheet, it's a skirt.
There are some great hot springs in NV too.
The salt flats are flat and hot and dusty and alkaline. FYI. I get through them ASAP.
Moab will be in full tourist swing and it'll be too hot to do anything. Do a day rivertrip if you can.
Arches will be jam-packed with folks.
Are you driving into Canyonlands at Island in the Sky (N of Moab)? There's a great place to camp off the road towards Dead Horse Point - called Long Canyon I think.

Grand Canyon will be a zoo, as will zion and bryce.
Death Valley?! Are you out of your mind?! 2 years ago my W had a car break down on a field trip in May - temp reached 125. Don't forget that kids are more susceptible to the heat. Plus it's a long way from anything.
Lee Vining, Bishop, Mono - now you're in my neighborhood. I have good friends in Bishop and we do field trips all over here. I'd skip Death Valley and go up to Yosemite instead. Or, if you're heading to Carson City, the area around Markleeville is incredible.
3 weeks? you're doing too much. take some time to smell the flowers .... uhh, cactus. You're going to get tired and it'll be nice to just string up a hammock somewhere and relax.
