Lin - I''m with you on the olives. Feta, garlic, extremely yummy! You are right about the enchiladas, I think the flavor gets better with a little time. Some things are better as leftovers!
I'll have to try the green sauce sometime, it sounds good! Everyone is so used to red, I'll pull the green on them sometime! (I make dinner every Sunday evening, W's parents come over. I try to be at least a little interesting.) We've got (on my side) history of cholesterol and diabetes, so I try to keep on the healthier side, stuff with veggies is good. (Not so much the cheese enchiladas, but, well, some things can't be helped!)
