Well, I imagine if the kids were not eating it, the topping could be made more 'interesting'. The the men could cook and drink at the same time. Like the guys on the cooking shows used to (haven't watch one in years, so can't say if they still do).

HELP

I hate coconut so what do you think I could use instead?


--Sweet Potato Casserole Recipe


Ingredients:
3 cups mashed cooked sweet potatoes
1 cup sugar
2 eggs
1/2 cup evaporated milk
1/2 cup melted butter
1 teaspoon vanilla
***TOPPING***
1 cup brown sugar
1/3 cup flour
1 cup flaked coconut
1/3 cup melted butter
1/2 cup chopped pecans (or more if desired)




Directions:

Grease a 13x9 pan.

Combine mashed sweet potatoes, sugar, eggs, evaporated milk, butter and vanilla in bowl with electric mixer until creamy. Spoon mixture into pan. Combine the topping ingredients with fork and crumble the mixture over the top of the sweet potatoes. Press lightly down into sweet potatoes. Either refrigerate overnight or bake right away.

Bake at 350F for 30 minutes. Serve warm.

I use that recipe every year-i love it!!!

For the topping i just use marshmellows-none of that fancy stuff \:\)

um...duh...just leave the coconut out.

The topping doesn't need it.

And the topping turns out better if you don't melt the butter, just soften it.

And you can use canned sweet potatoes, just drain them.

Just got a recipe for twice baked sweet potatoes.

Bake them in their skin.

When they are done carefully cut them in half and scoop out the yummy stuff and put it in a bowl.

Mix butter, chopped pecans, brown sugar and mini marshmallows together with a mixer.

Scoop back into the skins and bake for about 10 more minutes.
