eat bananas and avocados for potasium and healthy fats. Carbs are what give you the energy, but they need to be clean carbs. If you can handle switching from regular potatos to sweet that will have with the levels of starch. Make sure if you are trying to increase size(muscle) plenty of protein.
I'm eating 2 Banana's a day, mixed with the Shakes.
As far as Carbs go, I'm just not eating that many to be honest. When I do I'm actually making whole grain brown rice or High Fiber cereal.
But most of it is 12 grain Bread. Not really a good carb though. I've been supplementing most of my carbs with salads and raw veggies.

With the exception of and occassional Metlife ProteinPlus bars and sugar free red bulls, I prefer to get most of my vitamins and minerals from foods. It aint that hard.
