Should I respond with, You want to know why I didn't tell you I took our son to work? Because I thought that's what you want, for us to be able to do what we want with our childern without discussing.
Do I leave it at that or continue into how it doesn't feel good? Do I respond to her text, or make her talk face to face which she's been having a problem doing?

NO!!
You have already responded.
Why do you need to keep responding, what is she saying?
She is saying nothing, she sent text last night wanting to know why I didn't tell her. That's it so far. Sure she will bring it up again tonight if not earlier. Just want to know best way to respond when she does.
Took him to work to see what I do, he brought up to me the night before. Wasn't retaliation, was going to text her that I was picking him up, but thought to myself, she wouldn't tell me. She works long hours, so me picking him up doesn't effect her. I'm the one who gets him from school everyday. She found out fro pics I posted on Facebook of us at my work.

So IF the question of why you took him to work comes up then that is the answer ^^^^^ for a father son bonding day to see what you do!
