OMG!!!!!

Kat, that is almost verbatim the cake I just made today for S3's 4th birthday (coming up next weekend). It's what my mom calls a "Chocolate Sheath Cake". But I've tried other folks variants which they call a "Texas Sheath Cake."

Man, is it a small world or what? I started reading your list of ingredients, out of curiousity, and just about fell out of my chair!

S3 would like your recipe a little better -- he doesn't like the chopped pecans called for in the icing recipe for my Mom's recipe.

I tried to decorate the cake by putting colored frosting on top. I tried drawing an image of the Transformers character Bumblebee in icing -- not easy at all! I'll try to put some pics up on the alternate universe some time soon.

Kat, anytime you have a chocolate recipe feel free to share here! You know how I love the chocolate! \:\) I'm going to try it too if you don't mind!

NC, how do you do the icing thing??? I'm a pretty good baker, but tried to ice S's cake last week and it was not pretty!!! Karen

Well the kids don't like nuts, so I don't put them on top. The boys were actually upset with me for posting it saying it is a secret! I laughed and said lots of people make something similar(but to be honest I was upset too the first time I saw the very similar Texas Sheet cake!)

But it is still the best because it is made with love. \:\)

Then my grandma had us all beat as chefs -- she put love into everything.

Incidentally, I thought I had screwed to whole darn cake up by putting it into a 9 x 13 cake pan -- it calls for a 11 x 16 pan. Boy, did it turn out thick/tall -- and boy, did it ever turn out just as good!

Karen, I just used the ready-made tubes of colored icing in the grocery store. Wilton has a whole line. Only thing is, I've quickly discovered that the "gel" icings, while certainly a lot easier to work with, are quite a bit too runny and don't set up well at all like the regular icing types. They tend to bleed into each other too. They look good all by themselves, but I'm going to avoid them from now on.

Another note to self: Don't use powdered sugar, like I did, to form a "base" to put your image on. The icing refuses to cling to the surface because of the dry powdered sugar on top.

Another note to self: If you're ever going to put an image on such a cake again, skip the nuts in the icing. It makes for more texture in the "canvas" than necessary.

I have never tried a regular pan. I just always use the jelly roll pan. Yes, miss Goodie Two Shoes at work. lol
